Tarbooz is a small, green, oval vegetable from the gourd family. They taste good, eaten with rotlis and rice.
- Peel and cut tarbooz into small cubes.
- In a pan, heat oil on a medium flame. Add mustard seeds. As they crackle, add asafoetida, tarbooz and salt. Cover the pan. Keep the lid slightly open.
- Pour water on the lid for vaporization.
- Cook on a low flame for 15 minutes. Add the dry spices. Stir well. Cook till tender.
- Garnish. Serve hot with rotis and rice.
