Urad Dal
Urad dal served along with bajre ki roti makes a good combination, during the cool winter months.
    Preparation Method
  1. Wash and drain the dal.
  2. On a medium flame, in a pan, boil dal in 3 cups of water. Stir occasionally for 15-17 minutes, till dal is tender.
  3. Add 1 cup of hot water.
  4. Bring it to a boil. Mix in all the spices. Stir and simmer for 5 minutes.
  5. On a low flame, heat ghee in a ladle for tempering. Add cloves, cinnamons and cumin seeds. As they crackle, add asafoetida. Pour the tempering to the dal. Mix well. Stir continuously. Simmer for 5 more minutes.
  6. Garnish and serve hot with bajre ki roti and jaggery.
    Additional Note
  • This dal can be cooked in a pressure cooker up to 3 whistles. Add extra water to individual liking.

~ INGREDIENTS ~
    For the Dal
  1. 1 cup split black beans (urad ni dal)
  2. 1 teaspoon chilli powder
  3. 1 teaspoon dhana-jeera powder
  4. 1/4 teaspoon turmeric powder
  5. 3 cups water (for dal)
  6. 1 cup hot water
  7. 4-5 pieces of kokum (washed - soaked)
  8. salt to taste
  9. For the Tempering
  10. 2 tablespoons melted ghee or oil
  11. 1 teaspoon cumin seeds
  12. 3 cloves
  13. 3 cinnamon sticks
  14. pinch of asafoetida
  15. coriander leaves (optional - finely cut, to garnish)
